New Mexico Green Chile Stew
1 Tbsp. vegetable oil
1 lb. pork stew meat ½ in. cubed
3 small potatoes cubed
⅛ medium onion chopped
3 small tomatoes chopped
1 lb. roasted green chiles chopped
2 cloves garlic minced
1 cup water
1 tsp oregano
1tsp ground cumin
½ tsp. salt
Instructions:
Heat oil in 3 or 4 quart pot.
1 Tbsp. vegetable oil

Add meat and brown over low heat for about 4 minutes.
Add potatoes and onion, brown for 4 more minutes, stirring occasionally.
Add green chile and cook for 15 minutes.
Stir in tomato, garlic, oregano, cumin, water, and salt.
Bring to a boil, lower heat, cover, and simmer for 20 minutes.
Serve with flour tortillas.
