Japanese cuisine extends far beyond sushi, and this demonstration class with Chef Paul Brown offers a delicious introduction to the comforting, crave-worthy food of a traditional Japanese pub, or izakaya. Designed to be approachable yet deeply rooted in technique, the class highlights bold flavors, thoughtful balance, and practical recipes suited for the home kitchen.
Chef Brown will guide you through a complete izakaya-inspired menu, beginning with otoshi and moving through vibrant small plates and a satisfying main. Dishes include hamachi tataki with black garlic–ponzu and scallion oil, greens with avocado, tenkasu, and miso vinaigrette, and a torikatsu plate featuring panko-fried chicken, shaved cabbage, tonkatsu sauce, and lemon-scallion fried rice. The experience concludes on a sweet note with black sesame cookies served alongside vanilla ice cream.
Throughout the demonstration, guests will learn essential components that define Japanese home-style cooking, including black garlic–ponzu emulsion, scallion oil, miso vinaigrette, torikatsu, tonkatsu sauce, and black sesame cookies.
